Shrimp and Wakame Seaweed Salad

Sweet and tangy, this salad is served with shrimp and kale marinated in an orange curry dressing.

Ingredients

Salad

  • 1/4 Cup dried Wakame
  • 8 oz. Raw shrimp
  • 1 Cup washed, fresh Kale
  • 1 Sweet pepper
Dressing
  • 1/4 Cup milk
  • 1/2 Cup orange juice
  • 1 TBSP Rice Vinegar
  • 2 TBSP white sugar
  • 1 tsp. curry powder
Shrimp Marinade
  • 1 TBSP butter
  • 1/4 Cup orange juice

Directions

Shrimp

  1. Thaw shrimp and allow to soak in orange juice for 30 minutes
  2. Melt 1TBSP butter in skillet over medium-low heat and pour shrimp and orange juice into skillet
  3. Cook for 3-5 minutes on each side or until shrimp turn an opaque white/pink
  4. Remove from heat, drain liquid, and allow to cool in serving bowl
Wakame and Kale 
  1. Pour milk, orange juice,rice vinegar, sugar, and curry powder into a medium sized bowl and mix well.
  2. Put dried wakame into the liquid mixture and allow to absorb  the mixture
  3. Once the liquid is mostly absorbed, mix kale into bowl
Combine  
  1. Slice sweet pepper into 1 inch long strips, about 1/4 inch wide
  2. Place sliced sweet pepper strips and the wakame/kale mix into your serving bowl with the shrimp
  3. Mix the ingredients together and serve cool
This wakame and shrimp salad makes two large servings or could  be served as a  small side salad for 4-5 people.
