Wakame and Apple Salad

Apples, Corn and WAKAME?? This is the perfect salad to start off your dinner with the crisp flavors of fall blending beautifully with the healthful benefits of seaweed!

Ingredients

Serves 2: Time to finish 20 minutes

  • 1/2 CupĀ Wakame Seaweed
  • 1/8 Cup Apple Cider Vinegar
  • 1/2 Cup Water
  • 1 Apple
  • 1 Cup Corn
  • 3 TBSP Brown Sugar

Directions

  1. Combine apple cider vinegar and water into a bowl and mix well
  2. Place dried wakame seaweed into the liquid mixture and allow the seaweed to absorb the liquid for 10-15 minutes or until liquid is gone. Please note that you might have to stir the seaweed around to absorb the most liquid
  3. At this point, you can choose to blanch your seaweed (1-3 minutes) if you so desire. Personally I don't like to blanch my seaweed for this recipe but it will give you vibrant green color and make digestion even easier.
  4. Once the wakame has absorbed all of the liquid (or you have blanched it) then go ahead and sprinkle the brown sugar onto the seaweed and stir it in
  5. Cut the apple into small 1/4 inch cubes
  6. Boil the fresh corn for 10 minutes or until fully cooked. Cut the corn off of the cob (1 Cob may be more than 1 cup of corn)
  7. Mix all of the ingredients together and ENJOY!!
